Cal destacar que sempre <b>\u00e9s recomanable prendre-ho de manera espor\u00e0dica<\/b> a causa de l&#8217;exc\u00e9s de greixos que ens aporta; <\/span><!--more--><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">podem considerar-ho una opci\u00f3 de consum puntual i decantar-nos per un esmorzar m\u00e9s equilibrat i menys gras, <b>apostant per l&#8217;oli d&#8217;oliva verge extra<\/b>.<\/span><\/p>\n<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Anem a comprovar les difer\u00e8ncies entre aquests dos aliments:<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Tenint en compte el contingut de greix total, cap dels dos aliments destaca sobre l&#8217;altre ja que, <b>tant la mantega com la margarina contenen entre un 80 i 90% de mat\u00e8ria grassa.<\/b><\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Respecte al tipus de grasses que componen cadascun, la mantega est\u00e0 elaborada en gran proporci\u00f3 per \u00e0cids grassos saturats, entorn a un 52-65%, a difer\u00e8ncia de la margarina que s&#8217;elabora a partir d&#8217;olis i greixos vegetals i en menor proporci\u00f3 d&#8217;\u00e0cids grassos saturats. Amb la qual cosa, en aquest aspecte podr\u00edem considerar que <b>la margarina resulta m\u00e9s saludable que la mantega a nivell cardiovascular<\/b>.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">\u00c9s important tenir en compte que no tots els \u00e0cids grassos insaturats presents en un aliment tenen les mateixes funcions en el nostre organisme. Per poder valorar aquest aspecte, es parla de la relaci\u00f3 entre el contingut d&#8217;\u00e0cids grassos omega-3 i omega-6. Es pot considerar saludable l&#8217;aliment quan la relaci\u00f3 resulta<i> 4:1<\/i>; <b><i>4 parts de omega-6 per cada part de omega-3<\/i><\/b>. <b>I aquesta relaci\u00f3 no es d\u00f3na en totes les margarines<\/b>.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">En quant a l&#8217;elaboraci\u00f3 per poder elaborar la margarina, requereix de diversos processos tecnol\u00f2gics:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li><span style=\"color: #000000;\">S&#8217;afegeixen greixos d&#8217;origen vegetal, que s\u00f3n s\u00f2lids a temperatura ambient degut a la incorporaci\u00f3 d&#8217;\u00e0cids grassos saturats en els seus ingredients (oli de palmell i\/o coco)<\/span><\/li>\n<li><span style=\"color: #000000;\">S&#8217;apliquen diversos processos tecnol\u00f2gics per poder solidificar els olis: <i>fraccionament<\/i>, <i>interesterificaci\u00f3<\/i> i <i>hidrogenaci\u00f3<\/i> (aquest \u00faltim associat a <i>greixos trans<\/i>)<\/span><\/li>\n<li><span style=\"color: #000000;\">S&#8217;afegeixen espessidors, com la gelatina i la <i>goma xantana<\/i><\/span><\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Referent a la funci\u00f3 del colesterol, tamb\u00e9 juga un paper clau. \u00danicament ho podem trobar en aliments d&#8217;origen animal. En concret el <i>colesterol LDL<\/i> est\u00e0 associat a l&#8217;adher\u00e8ncia de greixos en les parets arterials (aterosclerosi).<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #000000;\">Com a conclusi\u00f3 final, podem dir que cadascun d&#8217;aquests aliments t\u00e9 els seus pros i contres i que conv\u00e9 llegir detalladament l&#8217;etiquetatge a l&#8217;hora de comprar.
